Based on what I observed at the nest sites, Kestrels prefer to transport large prey in their talons and smaller prey, like insects, in their beak.
Because they also need to use their talons to grip branches, or other surfaces, when landing or taking off, you will see Kestrels moving prey from their talons to their beaks during these phases of flight.
